With 27 years of extensive experience in the diverse food service industry Ken started his journey in the United states Marine Corps as a cook who then furthered his career as a Chef, Executive, Nutritionist in settings such as Healthcare, Childcare, Universities, Independent Living, Assisted living, and Drug/rehab facilities, Ken Granger, is a seasoned professional known for his exceptional expertise and achievements.
Ken specializes in implementing controlled labor models, cost control strategies, purchasing optimization, contract negotiations, Holistic Nutrition . His profound knowledge and in-depth understanding of the industry have enabled him to consistently deliver outstanding results and drive operational excellence in various settings.

Darcy Domingues, RDN, MBA is a registered dietitian who received her bachelors degree in Human Ecology from Montclair State University is 2006. She demonstrated progressive leadership moving from staff dietitian into various regional roles. Darcy then decided to return to graduate school to receive an MBA from Washington State University in 2017.
During this time she went into private practice providing medical nutritional therapy to outpatient clients. Darcy’s passion for Food and Nutrition and strength in operational leadership has propelled her into a VP of operations role with PDG. Her strengths include contract development, fostering business relationships and leading her team to elevate the dining experience.
Through her dedication and commitment to cultivate a supportive and positive working environment, Darcy has assisted in the rebranding of Pinnacle Dietary Global to what it is today.

Roel Lopez, CDM, DTR graduated from the University of the East in the Philippines in 1991 with a major in Hotel and Restaurant Management. He also holds an associate degree in culinary arts and science from University of the East. He further took some classes at French Culinary Institute in NY, Roel is a member of the NY-NJ Bartender Association and Dietary Manager Association.
Roel joined Pinnacle Dietary Global as the Corporate Executive Chef and quickly rose to the position of -Director of Culinary Development along with his Corporate Executive Chef title. His unique skillset and passion for food was identified early on which allowed him to showcase his knowledge and skills throughout the company while educating other Chefs and cooks. Roel has implemented several specialty programs: Indian Cuisine Program, Asian Cuisine Program, Spanish Cuisine Program and Farm to Table Program. Roel also created quarterly culinary clinics open to Pinnacle Dietary Global chefs/cooks. Roel is well versed in the creation, coordination, implementing and monitoring of menus, recipes, catering, training, purchasing, and implementing culinary programs such as, pop up theme meals, inter division culinary competition and working with facility marketing teams. .
Teddy Ramirez’s passion for Health Care Food Services started 27 years ago. He started in a Kosher Facility as a dietary aide in Atlantic City, NJ. With lots of dedication and hard work throughout the years, he has climbed the ladder to success. Five years after working as a dietary aid, he became a Banquet Chef for the Sheraton Hotel in Atlantic City.
As a Banquet Chef, he catered over 1500 people for all types of events. In the next few years, he worked as a Food Service manager/general manager in various Kosher and Non-Kosher facilities in NJ, PA, and NY.
In 2016, Teddy transitioned from a Food Service Director at a Kosher facility in Lakewood, NJ to a Regional Managerial manager for a Food Service Contract company in Linden, NJ. As a Regional Food Service Manager, he managed day-to-day kitchen operations for 10-15 accounts in NY, NJ, PA, and GA.
In 2019, he joined Pinnacle Dietary Global as a Regional Dietary Manager handling over 10 accounts in NYC and NJ. He comes to Pinnacle with extensive knowledge in Kosher dining, long-term care, drug rehab, assisted living, kitchen operations, and sanitation. He has an outstanding understanding of State Survey Audits and strengthening relationships with clients.
During his free time, Teddy enjoys playing his guitar, cooking, and grilling all year long. He enjoys his time with his family and twin girls in Harrison, NY.
Brittney is a Registered Dietitian who completed her Bachelor’s degree in Foods, Nutrition and Wellness Studies at New York University in 2011. Brittney continued to complete her Dietetic Internship program at the University of Medicine and Dentistry of New Jersey in 2012. She also received her Certified Diabetes Care and Education Specialist credential in December 2020. Brittney has extensive knowledge and experience as an Acute Care Dietitian specializing in Gastrointestinal, post-operative, Pediatric Medical Nutrition Therapy and Nutrition counseling to patients and families. Brittany has brought her knowledge and experience to Pinnacle Dietary Global in the role of Regional Clinical Manager overseeing Clinical compliance across all accounts in multiple states.
April boasts a substantial background in the health and wellness arena spanning over a decade. Her journey began as a registered yoga teacher in 2014, eventually leading her to pursue a bachelor’s degree in Health and Exercise Science. Subsequently, she delved into the realm of nutrition, obtaining a master’s degree in Nutrition and Food Science from Montclair State University in 2019, where she also solidified her path as a registered dietitian. April furthered her academic pursuits by earning a second bachelor’s degree in Foods and Nutrition from Saint Elizabeth University in 2020.April then ventured into academia as an adjunct professor at Saint Elizabeth University and presently contributes to the Food and Nutrition Advisory Board. Joining Pinnacle Dietary Global in 2022 as a long-term care dietitian, April discovered deep satisfaction in optimizing residents’ nutrition statuses while forging meaningful connections. Her dedication and expertise led to a promotion as Lead Dietitian within Pinnacle Dietary Global, where she currently collaborates with the regional dietitian to oversee the nutritional aspects of the company’s long-term care facilities across the tri-state area. Additionally, April serves as the Co-Public Policy Coordinator for the New Jersey Academy of Nutrition and Dietetics, further solidifying her commitment to the field. For April, this immersive involvement in her passion transcends mere occupation; it is undeniably a cherished privilege.
